This is the name of a large plot at Savigny-lès-Beaune, situated next to the lieu-dit Le Village, not very far from the river Rhoin course. There could have been gardens, village houses and enclosed meadows near the river. The lieu-dit Le Village, created recently, reminds us that the commune has enlarged its vine territory by gathering small plots of land that could be gardens or vines or meadows. The fact that Clous is in the plural encourages us to think that before they became vine lands, these soils were cultivated gardens or meadows.

Clayey limestone soil with limestone scree on a Jurassic period subsoil. These very rocky soils are warm and dry.
The grapes are crushed and 100% destemmed. The fermentation starts rapidly (there is no pre-fermentation maceration). The extraction of aromas, tannins and colour is natural (no enzymes are introduced and no excess heating is used to avoid over extraction) and occurs uniquely via punching down. The vatting period lasts 10-12 days. The free-run wine and the first press wine are blended, allowed to settle and then put into barrel. The Savigny Premier Cru “aux Clous” is aged in 15% to 20% new barrels. The barrel oak from the Allier forests brings an elegant aromatic touch to the wine and the oak from Nevers gives structure. The wine is aged in barrel for about a year; the wine is not fined and is bottled after a very light filtration.
This gentle south-facing slope looks towards the village of Savigny. It is at an altitude of around 260 m right at the heart of the appellation.
